When brewed, you can expect some bright yet smooth, nectar-like pomelo fruit, a backbone of creamy milk chocolate, and a honeyed sweetness—simply delicious taken black or white.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\" class=\"preFade fadeIn\"\u003e\u003cspan\u003eThis coffee is the product of the work of the non-profit coffee education organization, Cafelogia, which works to make education and scientific research more readily available to farmers in the Chiapas region, as well as spearheading collaboration between producers and communities. This particular lot is the direct result of such organization and collaboration—in this case between Mr. Velasco who organized the lot’s cultivation and careful blending of the yield of a handful of producers in the Sibactel community. After harvesting, this coffee was assessed for quality and further refined based on feedback from directors of Caflogia’s local station in Sibactel, which functions as a beneficio comunitario—a community center dedicated to improving the production of its surrounding communities by making knowledge and proper processing and milling equipment as available as possible. Cafeología's agronomy team additionally walks the hills house to house, offering coaching on selective picking, flotation, and fermentation, later verifying moisture, water activity, and cup quality when parchment arrives at the mill for consolidation and export preparation.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\" class=\"preFade fadeIn\"\u003e\u003cspan\u003eBourbon is one of the most ubiquitous and well-known varieties of C. arabica, particularly in South America. Bourbon was first introduced to Bourbon Island—now La Réunion—from Yemen by French missionaries in the early 18th century. It wasn’t until the mid 19th century that Bourbon proliferated beyond Bourbon Island, when it was brought by missionaries to Africa and the Americas. When sipping on this coffee, we find an immediate juicy tropical note of passion fruit, followed by a bouquet of sweet, yellow, sunny chamomile, and the bright and crisp zing of gala apple.\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\" class=\"preFade fadeIn\"\u003eJuan’s farm, Finca La Palestina, is located at 1.900 masl in the Cajamarca region of northern Peru. Mr. Alarcon first purchased the plot of land which would become La Palestina in 1978, and now manages the farm in collaboration with his son, Jose Alarcon. Despite its small size, being only 2 hectares, Juan grows four varieties—marshell, sidra, geisha, and inca geisha.\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\" class=\"preFade fadeIn\"\u003eThe genetic heritage of the sidra variety remains relatively uncertain, with two dominant narratives about its origin. The first theory is that it originated from a Nestle research facility in the Pichincha region of Ecuador, where it was created by crossbreeding typica with bourbon; the second being that it is a naturally-occurring mutation of an Ethiopian landrace variety. Due to demonstrable genetic similarities with native Ethiopian varieties when tested in a lab, as well as similarity in cup profile in terms of sweetness, florality, and stone fruit qualities, the later theory is the one we endorse, making it most likely not actually bourbon at all, and instead yet another example of an Ethiopian landrace variety that made its way to Colombia, just like chiroso, geisha, mejorada, papayo, pink bourbon, aji and wush wush. In this fully natural yellow catuai produced by Matheus Avellar of Fazenda Lagoinha, we find a pleasing layered complexity, an abundance of subtly winey, grenadine-like pomegranate, sweet black liquorice, and deep, aromatic violet. This coffee represents the true potential of Brazilian coffee—nuance, complexity, sweetness, delicate aromatics, and bright acidity without any of that hollow, grainy, nutty character that is so common to coffees from Brazil.\u003c\/p\u003e\n\u003cp class=\"preFade fadeIn\" data-rte-preserve-empty=\"true\"\u003eLocated at 1.100 masl, Fazenda Lagoinha is made up of approximately 120 hectares of land dedicated to coffee cultivation, and an additional 62 hectares of natural preserve surrounding and protecting the farm. It was originally founded in the 1920s as a commercial coffee farm, but was converted to specialty coffee production in 2019, when Matheus and his business partner, Carlos Canellas purchased the farm. Since its purchase, Mr. Avellar has transformed Fazenda Lagoinha into a highly sustainable farm, capable of producing lots of outstanding quality, as evidenced by this one. Besides yellow catuai, Matheus also cultivates geisha, mundo novo, and arara.\u003c\/p\u003e\n\u003cp class=\"preFade fadeIn\" data-rte-preserve-empty=\"true\"\u003eCatuai is the result of cross-breeding mundo novo and caturra, and was initially created in 1949 by the Agronomic Institute of Sao Paulo, Brazil, and released for cultivation in 1972. It is a smaller plant, being much more compact than caturra, which allows farms to plant them at a higher density, increasing overall yield and productivity. One of its primary drawbacks is its high susceptibility to leaf rust. Catuai can be found growing in both yellow- and red-fruited types. This coffee is a perfect example of the extremely high potential for quality that more traditional Colombian varieties have, when cultivated and processed with a great deal of care and intention, as this one has been. This coffee presents us with a refined, deep red cup, full of syruppy, round stewed cherry, light white honeysuckle florals, and juicy apricot throughout.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\" class=\"preFade fadeIn\"\u003e\u003cspan\u003eWe asked Alejandro for his history and thoughts on coffee farming, and he had the following to say: “My name is Alejandro Ruiz, a fourth-generation coffee producer . . . As we have come to expect from HSIL coffees, this one presents the very best that Costa Rican terroir has to offer, and the heights of flavor that the bourbon bourbon variety can attain, when tended to as meticulously and lovingly as it has been in the case of this lot. This is a super delicate, transparent cup, offering up white spring cherries, subtle honeysuckle florality, and a baseline of orange brightness throughout. This one truly blew the team away, and we couldn’t be more enthusiastic to begin the good work with Hacienda San Isidro Labrador.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\" class=\"preFade fadeIn\"\u003e\u003cspan\u003eOver 100 years ago Johel’s father—Mathias’ grandfather—moved from the suburbs of San Jose to Tarrazu with the intention of making the most of the rapidly developing coffee industry in the region at the time. He began by just picking coffee, but was eventually able to afford to purchase his own farm. This farm was handed down, then, to Johel who decided to sell it in favor of buying new land in the less-developed and higher-altitude Dota area of Tarrazu. This land, purchased in the 1980’s, became what we know today as Hacienda San Isidro Labrador, located just a click north of the village of Santa Maria de Dota. Initially, Johel planted just catuai and costa rica 95, but with the explosion of Panamanian geisha in the early 2010s, decided to focus primarily on geisha cultivation himself. In 2012, Johel and his son Mathias planted thousands of geisha and typica trees, as well as a select few plots of bourbon trees, which contributed to this lot. Located at 1.600 masl, Nelson’s farm, La Herencia, is only 1.2 hectares in size, making the meticulous care of his stock more manageable. Mr. Vallecillo only grows paraneima trees on his farm, and we think that this streamlined, focused, pared-down approach to coffee cultivation has definitely paid off, and is immediately evident in the quality and uniqueness of this lot.\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\" class=\"preFade fadeIn\"\u003eParaneima is a pedigree selection of T5296 (also known as sarchimor), which was initially released by the Honduran Institute of Coffee in 2004, and is still primarily cultivated in Honduras. Sarchimor, in turn, is a family of varieties whose genetics consist of a cross between villa sarchi (a natural dwarf mutation of bourbon) and timor hybrid (a natural cross between C. arabica and C. canephora). Other varieties in this family include obata and tupi (most prominent in Brazil), cuscatleco (most prominent in El Salvador), and limani (most prominent in Puerto Rico). What hit us first, and most notably when first sampling this coffee was the clear and definite stewed blueberry note, a note which is certainly uncommon in washed Colombian coffees, and which reminds us of a stack of steaming blueberry pancakes, straight off of the griddle. We also pick up the flavors of deep, red, floral hibiscus and dark, robust, and tannic Darjeeling tea—a truly layered, unique, and beautiful cup.\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\" class=\"preFade fadeIn\"\u003eOmbligon is a relatively rare and newly-discovered variety, currently grown solely in Huila, Colombia. Definitive genetic research has yet to be performed on ombligon to reveal its genetic composition and heritage, but there are a few theories regarding its origins. One theory is that it is yet another example of an Ethiopian landrace variety that made its way to Colombia, just like pink bourbon, chiroso, geisha, mejorada, papayo, sidra, aji and wush wush. This would make sense, at least in terms of the similarities between the typical flavor profile of ombligon and that of Ethiopian landraces. Due, however, to its hardiness and adaptation to Colombian growing conditions, as well as similarity in morphology, others theorize that it is a mutation of more traditional varieties like caturra, bourbon, castillo, or even pacamara. We have been on the lookout, for some time now, for a Colombian SL28 worthy of our menu, and given Paola’s proven history of outstanding quality, it should have come as no surprise to us that this lot would hit the mark for us. In the cup, we find all the best characteristics of a classic SL28 profile—an abundance of freshly-squeezed lime acidity, juicy, bright red currant and berries, and crisp, sweet cameo apple.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"preFade fadeIn\" data-rte-preserve-empty=\"true\"\u003e\u003cspan\u003ePaola’s family farm, Patio Bonito, located at 1.700 masl in the coastal region of Cauca, Colombia, has been in the Trujillo family for two generations. It was founded by her father, Carlos Trujillo, who has begun ceding increasing authority over the farm over to his daughters, Paola and Patricia, who have been learning the art of coffee cultivation garnered from Carlos’ 40+ years of experience as a coffee farmer and agroforestry engineer. As opposed to the super bright, lively profile we found in Yenitzin’s coffee, this one presents much more dark, mellow, and sweet, and just like the SL28, also remains incredibly faithful to Kenyan expressions of the variety. Within the cup, we find sweet, juicy, and dark black plum, which is tempered a bit by crisp, clean, white vanilla which covers the palette. On the finish, we find pleasant hints of black cherry cola, manifesting as an abundance of more dark, juicy fruits, as well as that spice blend unique to a traditional cola. This lot is truly one of a kind, and we couldn’t imagine a better pairing for Yenitzin’s SL28 than this, Martin’s SL34.\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\" class=\"preFade fadeIn\"\u003eMartin Santos founded Finca Esther in 2002—alongside Esther Leung—which along with Finca Minerva, and Finca El Salto, make up Mas Cafe. Located at 1.550 masl in Boquete, Finca Esther is extremely well placed in terms of the quality and durability of its terroir, sitting on the slopes of the Baru volcano, which made it an easy decision when Martin and Esther were initially looking for land to make into a coffee farm.
