Smallholder farmers deliver ripe cherries to the washing station on horseback or motorcycles. Cherries are washed and depulped using water from the glacier-fed Kii River. Coffee is dried on African raised beds to 11-13% moisture, then transported to Central Kenya Coffee Mill in Karatina for grading and sorting. The factory is managed by a dedicated team overseeing all activities including farmer payments and complaint resolution. Environmental sustainability initiatives include wastewater soak pits away from water sources and encouragement of tree planting on farms. Farms are surrounded by native forests where wild animals including elephants and buffalo live. Roast color: 129.6. For filter brewing, sugary sweet cups emerge with less rest, displaying red fruits and hibiscus notes; with more rest and extraction, spiced apple cider notes develop, while lower extraction yields brighter, fresher Granny Smith apple flavors. Recommended grind finer with brewing ratio around 1:17. For espresso, higher clarity shots work well at 16g in, 55-60g out in approximately 32 seconds at 6 bar without pre-infusion.
