The researchers spent over 30 years breeding this cultivar that is resistent to leaf rust and has potential to produce a very good cup quality. The parent plants are Timor Hybrid (a natural Robusta and Arabica crossing) and Caturra. A few years after it's launch in 2005, Colombian coffee farmers experienced a huge outbreak of leaf rust attacking the traditional cultivas like Caturra and Bourbon. Most farmers recovered in record time as the Colombian coffee growers federation helped supporting them with new Castillo seedlings to replace the traditional susceptible cultivars. It means that over 60% of the coffee grown in Colombia today are Castillo cultivars.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eProduction\u003c\/strong\u003e\u003cbr\u003ePicking and sorting: Selectively hand picked by hired pickers under supervision of Elias. Cherries are hand-sorted before processing to ensure only ripe cherries are processed together. Depupling, fermenting \u0026amp; washing: Coffee cherries stored in cherry hopper overnight before de-pulping in morning. After de-pulping, parchment coffee fermented for 24 hours in stainless steel tanks. Washed using eco-mill which reduces water waste to 0.5-1 litre per kilo. Soaked for 24 hours, floaters removed. Drying: Dried in parabolic dryers and drying beds with shade nets for 20-30 days until moisture content below 11%. Both the 18g, 20g and the 22g basket is great for our coffee.
