Notes From the Roaster
An innovative and experimental lot from Elkin Guman and his farm El Mirador. Located near the town of Palestina in Huila, Colombia. This coffee is a true co-ferment, wherein the coffee is fermented alongside local fruit and flowers. Brown sugar and sourdough culture is added for an additional fermentation platform. The results are explosive. Fruit Stripe Gum, Cherry Blossom, Passionfruit, Perfumy. Catiope and Bourbon varieties.

Method: Coffee cherries are co-fermented with local fruits and flowers for 4 days. Brown sugar is added before another 60 hours of fermentation. Finally, sourdough culture is added for 270 additional hours of fermentation. The coffee is pulped and dried in canopies until the moisture content reaches 10.5%-11%.
