We have now been purchasing coffee from Finca Soledad for 3 seasons. This time around, we are privileged to feature a honey processed varietal set with Mejorado and Sydra. This is the first season that Pepe & company have applied honey processing to their coffees, and we are blessed with the chance to continue seeing new, beautiful expressions of varieties from this farm that we have become so well acquainted with.

We desire to honor and promote all of the hands that were involved in this coffee, and the names you see above include everyone involved in planting & nurturing trees, picking cherries, processing and drying, milling and preparing the coffees to be exported. You will see all of these names printed on the label for this coffee!
This Sydra lot is totally set apart from the previous 3 we have roasted and featured from this farm - in regards to how it displays in the cup. The aroma is quite purple fruit-forward, and the cup leads off with a prominent blackberry that feels most similar to a blackberry sauce or syrup. The middle is a meld of tropical pineapple and dessert-like vanilla sweetness. The finish is a botanical quality most reminiscent of juniper. This processing should be considered most akin to "purple honey". I find this profile to be solidly fruit-forward while also not veering into funky town. It's got great complexity and intrigue, and is my favorite Sydra we have roasted from Soledad by far.
