Filter eval day 1: Gabi Standard Recipe of 1:18 shows a very tart cup upfront, switching to a shocking mint character before finishing with a unique tart-savory combo. Rather confusing, notes jump around from front to back, and include many notes not listed.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.

Process: High-intervention washed
Process details: Ripe cherries are floated to sort defects. Anaerobic fermentation for 40 hours. Oxidation process for 20 hours where leachetes are collected for a later step. Cherries are pulped, then oxidated in mucilage, adding leachetes. Submerged fermentation for 12 hours. Coffee is washed and thermal shocked, then dried until reaching target moisture.
