Peru stunner #2 of the season arrives with another superbly complex profile. This lot contains multitudes, from a bracingly citric acidity (the bitterness of grapefruit or yuzu is apt), to sublimely layered floral notes of osmanthus, jasmine, honeysuckle, and others. This is a bit more challenging of a cup compared to last month's Peru, and just as superlative.

Filter eval day 1: Gabi Standard - Notes all hit, bitter citrus up front, into honeyed floral tropicals, into floral finish. Highly layered and complex.

We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
