About the Variety
JARC varieties are heirloom cultivars selected for their performance in Ethiopian terroir. Ethiopia is thought to be the genetic origin of the coffee plant, and these varieties represent the diversity of indigenous coffee genetics. Ethiopian coffees are known for small and dense beans, packed with complex fruit and floral flavors and a tea-like body.

Production
Produced by 150 smallholder farmers from Wocho Sololo, Tabata, Mebocho, and Mender communities in Guji Oromia, working with the Osolo Washing Station. Grown at high elevation (2240-2280m) in the ideal terroir of Ethiopia, which boasts consistent rainfall and rolling hills of red loamy soil. Producers generally own small plots of land with subsistence farms and a few coffee trees.

Roaster Notes
Honey process coffees exist on a wide spectrum between washed and natural. Within honey process, there are distinctions between white, yellow, red, and black honey, respective to increasing amounts of mucilage left on the coffee during drying, and reflecting resulting bean flavor. This Othosololo honey process represents the complexity and balance that this processing method can achieve, bridging the characteristics of washed and natural coffees.
