Production
Coffee sourced from approximately 500 smallholder farmers cultivating 2-5 hectare farms around Dambi Uddo in the Shakisso woreda. Farms grow coffee under shade of native trees (Birbira, Wanza, Acacia) alongside maize, enset and grains using traditional farming systems with minimal synthetic inputs. Cherry is selectively hand-harvested and delivered to Hadeso Washing Station, established in 2017 and managed by Testi Coffee. At the station, cherry is sorted and pulped within 6-8 hours of harvest, then fermented in tanks for 36-48 hours with frequent water replacement. Parchment is washed in channels, then dried on raised beds under parabolic shade net for 5-7 days to 11-12% moisture content, with regular turning and hand-sorting to ensure uniform quality.
Roaster Notes
A very delicate cup, we're tasting classic Ethiopian flavors of black tea and meyer lemon, with a honeydew-like sweetness. Roast color: 131.4. Filter brewing notes: Peaking around 3-5 weeks of rest, this coffee can be brewed very flexibly. We prefer to grind finer with a brewing ratio around 1:17. Don't be afraid of longer contact times. This accentuates the honeydew and Meyer lemon. For more tea-like cups, grind coarser and reduce agitation. Espresso brewing notes: Best brewed 4-6 weeks out. Faster shots in the 24-28s range have been sparkling and clear. 6 bar, no pre-infusion.
