Production
Santa Helena is an 11-hectare family farm that cultivates chiroso, pink bourbon, gesha, and var. Colombia. Working with partners InConexus, the farm is continually improving their farming practices. Ripe cherries were selected, depulped, and fermented for 48 hours. After thorough washing, the coffee dried in parabolic driers for 20-25 days.
