About the Variety
Pink Bourbon is a variety primarily grown in Huila. Though newer than other varietals, it has quickly grown in popularity for its bright, sweet, and aromatic profiles. It is now known to be an Ethiopian Landrace.

Production
José grew up learning coffee from his father. They began cultivating coffee nine years ago, dividing up tasks to manage their production efficiently. José now works daily with his father and brother to produce incredibly specialty coffee. Processing begins with selective harvesting of ripe cherries, followed by floating and sorting. After depulping, the parchment ferments for 20 hours in tanks and is then washed and dried in a marquesina for 10 to 12 days.

Roaster Notes
This is our first time working with José's coffee, and one we're very excited to feature for it's very expressive, juicy and bright profile. This coffee reminds us of white grapes, juicy limes with a sparkling grapefruit like acidity. In the cup we taste juicy citric acidity like limes and lemons and grapefruit, with a bright green attribute that reminds us of freshly squeezed limes. This coffee is sparkling with a clean finish.
