About the Cultivar
Khalid is mainly growing old cultivars that was planted by his grandfather many years ago. When establishing the farm, Khalid's grandfather selected seeds from wild coffee trees from the the nearby Coche forest and the trees he planted are still producing well today.
Production
Picking and sorting: Cherries selectively hand picked and sorted before resting overnight in cherry receiving tank. Depupling, fermenting & washing: De-pulped in morning, wet fermented for about 24 hours, graded and washed in channel. Drying: On elevated drying tables with shade nets for 12-14 days, raked during daytime, finished at 9-11.5% moisture. Storage, logistics and milling: Stored in air tight grain pro bags, delivered to dry mill in Addis Ababa for cleaning, sorting and vacuum packing before export.
Roaster Notes
Tim's notes: Been buying from Khalid for many years. During November 2023 visit, implemented protocol improvements including separation of daily pickings, storing each lot in air tight grain pro bags after drying, drying under shade nets, better fermentation control, and slight process changes to elevate quality.
